The role requires culinary excellence, team leadership, and strict adherence to service standards.
Responsibilities
Lead and supervise kitchen brigade ensuring timely, high‐quality food production.
Maintain sanitation, hygiene, mise‐place, and storage areas according to health‐food safety protocols.
Coordinate ingredient inventory, rotation, and procurement, applying the PEPS system.
Prepare and execute recipes with discipline, discipline, and consistency.
Control refrigerator temperatures and monitor food safety equipment.
Communicate incident reports, shortages, and floor staff needs to Sous Chef and leadership.
Support Sous Chef, Chef and Executive Sous Chef in execution of daily checklists, opening and closing of stations.
